I know what today REALLY is… a prep day for the holiday tomorrow! With that in mind, I’ve compiled a bunch of delicious recipes using olive oil (of course, what else did you expect?!), for all of you last-minute chefs out there.
Here’s the catch: they’re all desserts. Two reasons: 1) I love dessert. Enough said. And 2) when you center your desserts around olive oil, people usually consider it special and exotic — and that perhaps you are an absolutely incredible chef. So delight your fellow party-goers!

I realize this sounds odd — but just trust me. Olive oil on ice cream is absolutely spectacular, particularly when you choose a strong, grassy or buttery Extra Virgin Olive Oil. Salt & Straw, an incredible ice cream shop chain in Portland, even came up with their own Arbequina Olive Oil flavor. It’s great!
This is a easy-to-make option for flavorful, simple and delicious cake.
Talk about taking the cake above to the MAX! This is a delicious berry-filled recipe with Mascarpone, one of my favorite cheeses and additions to dessert ever. Rich and not too sweet. Spectacular!
This dessert combines two classic summer desserts in my family: Strawberry rhubarb pie and strawberry shortcake. Even better, the shortcake is made with olive oil!
